Vanilla Ice Cream without Ice Cream Maker

Hello hungry friends!

The summer is here and so is ice cream!! For this recipe you don’t need any machine, just your freezer!

Time:

Preparations 20-30 minutes

You will need:

2 1/4 cups whole milk, divided
5 teaspoons cornstarch
2 ounces cream cheese, very soft
1/4 teaspoon fine salt
1 cup heavy cream
2/3 cup sugar
2 tablespoons honey
1 teaspoon vanilla extract

1) In your first small bowl, whisk together the cornstarch together with 1/4 cup of milk. Whisk real hard to make sure that the milk and cornstarch are combined.

2) In your second small bowl, whisk the cream cheese until smooth, then whisk in an additional 1/4 cup milk. Leave both aside for a while.

3) In a saucepan whisk together the remaining 1 3/4 cup milk, the heavy cream, sugar, and honey. Bring this mixture to a simmer over medium heat, whisking frequently. Reduce the heat and simmer for 4 minutes. Remove the hot milk from the heat.IMG_0037

4) Whisk about 1/2 cup of the hot milk into the cornstarch mixture. Slowly pour this back into the hot milk, whisking constantly. Return to the heat and cook, whisking frequently, until it comes to a boil. Boil for 1 minute then remove from the heat. Whisk in the thinned cream cheese. Whisk in the vanilla extract.

5) Pour the mixture into a bowl or a baking pan, whatever you prefer, and place into freezer for 45 minutes.

6) After 45 minutes the ice cream should be thicker and starting to be frozen. With spatula stir it real hard until you get a thickish creamy texture. Place in freezer for another 30 minutes. Repeat several times, each time after 30 minutes until you get the right texture.

Quiche in 5 Minutes

Hi! Today I will share a recipe for quick and yummy lunch! If you feel like you don’t want to cook a lot or you’re looking for easy and tasty meal- Quiche in microwave!

Time: 5-10 minutes

You will need:

  • 1 egg
  • 1 1/2 tbsp of milk
  • cherry tomatoes
  • salt and pepper
  • 1 slice of toast bread (you can use crackers if you don’t want to use bread)
  • spinach (optional)
  • shredded cheese

  1. Crack 1 egg in a small bowl or a cup

2. Add milk and stir. Cut 4-5 cherry tomatoes in halves.

3. Add tomatoes and toast bread – teared in small pieces, and stir. Make sure all of the bread is soaked in the liquid. You can also add spinach in small pieces.

4. Finally add cheese – you can use any kind of cheese you like.

5. Place the bowl in a microwave for 90 seconds on high.

6. Enjoy!

Frozen Yogurt Covered Fruit

When you can’t handle the hot weather anymore and craving ice cream, I have a perfect solution for you! Low on sugar and fat – Frozen Yogurt Covered Fruit!

Time:

3-5 minutes (preparation)

1 hour in freezer

You will need:

  • Low fat/cal yogurt – any type you like – if you use plain greek yogurt just add stevia for better taste.
  • Your favorite fruit – I used blueberries and banana
  • toothpicks
  • wax paper
  1. First cut your fruit in bigger pieces

2. Use toothpicks for each piece of fruit.

3. Dip your fruit in yogurt. Make sure it’s fully covered in yogurt.

4. Place each piece on a wax paper. And then put in a freezer for at least 1 hour.

5. When the yogurt is completely frozen, remove from the freezer and put in a baggie. Enjoy!!!

Mug Cheesecake with Blueberries and Greek Yogurt

My first recipes is one of my favorites! Super fast and super easy!

Time: 5-10 minutes

You will need

  • 4 tbsp cream cheese
  •  ounces cream cheese
  • 2 tbsp sour cream
  • 1 egg
  • 1/2 tsp lemon juice
  • 1/4 tsp vanilla
  • 2-4 tbsp sugar (add more if you like)

For decoration

  • blueberries or strawberries
  • whipped cream (I used greek yogurt)
  1. Mix all of the ingredients in a mug (or a small bowl) and stir.
  2. Put the mug in a microwave oven for 90-120 seconds.
  3. Stir each 30 seconds.
  4. Put in a fridge or a cold place before serving and decorating
  5. Serve cold and enjoy!
